Absolutely! This cornbread without eggs is perfect for these crazy times when eggs are 6 dollars a dozen (or more!). Or for those times when you run out of eggs and don't feel like going to the store (also happens to me on a regular basis). But honestly, you cannot tell this cornbread doesn't have eggs in it. The refrain at the table from my kids was "More cornbread please!" Repeatedly. So cute. They also loved helping me make this cornbread. It's such a fun activity to bake with kids, chaotic as it is. They take so much satisfaction in telling daddy about how they helped mommy make dinner. Plus, it's so fun having kids involved in something productive instead of destructive...not that that ever happens at my house. 😉 Because when two little boys are in cahoots, you never can tell what is going to happen. No Need To Buy Expensive Eggs! This may be obvious, but one of the perks to this cornbread is that you don't have to worry about stocking your fridge with eggs to make this recipe! So Fluffy! "It's so fluffy I'm gonna die!" Not really quite that fluffy, but moist and fluffy for sure. I'm honestly amazed it tasted so much like, well, cornbread. Salt- you never notice the salt unless it's gone! Salt in breads are absolutely essential- don't skip it!
Baking Powder- I increased the baking powder in this dish to make up for the fact that there isn't any egg. :)
Cornstarch- Added this as well since this dish doesn't contain eggs.
Milk- provides a more tender crumb to this yummy cornbread!
Oil-helps keep this cornbread moist and prevents it from drying out!
Greek Yogurt- adds some protein to this dish since it doesn't contain eggs.

Can I substitute Jiffy or cornmeal mix instead of using plain cornmeal? No, it won't turn out the same at all! Cornmeal mix contains flour and leavener, while cornmeal does not contain those ingredients.
