Can You Make Cornbread Without Eggs?

Absolutely! This cornbread without eggs is perfect for these crazy times when eggs are 6 dollars a dozen (or more!). Or for those times when you run out of eggs and don’t feel like going to the store (also happens to me on a regular basis). But honestly, you cannot tell this cornbread doesn’t have eggs in it. The refrain at the table from my kids was “More cornbread please!” Repeatedly. So cute. They also loved helping me make this cornbread. It’s such a fun activity to bake with kids, chaotic as it is. They take so much satisfaction in telling daddy about how they helped mommy make dinner. Plus, it’s so fun having kids involved in something productive instead of destructive…not that that ever happens at my house. 😉 Because when two little boys are in cahoots, you never can tell what is going to happen. Might as well channel that energy to making delicious cornbread!

Why You’ll Love This Cornbread Without Eggs

No Need To Buy Expensive Eggs! This may be obvious, but one of the perks to this cornbread is that you don’t have to worry about stocking your fridge with eggs to make this recipe! Perfect for those times when you’re just plain out of eggs and don’t feel like running to the grocery store. Or when bird flu hits. Both are good times to make this cornbread haha. Here are some other recipes without eggs that can be useful!

So Fluffy! “It’s so fluffy I’m gonna die!” Not really quite that fluffy, but moist and fluffy for sure. I’m honestly amazed it tasted so much like, well, cornbread. My family had no idea it didn’t contain eggs. And I didn’t even bother telling them. Everyone was too happy busily munching on cornbread!

Fast– You can make this cornbread in under half an hour! I love doing quick breads for church events or when I’m hosting because you can make them a day ahead AND they are a huge hit. And they don’t take hours and hours to prepare, unlike yeast breads.

Perfect Side- This pairs perfectly with soup (try my chicken bacon orzo soup if you’re needing ideas!), chili, or summer salads. (If you want a vegetarian entree, pair this cornbread with my black bean goat cheese salad. It’s divine!)

Ingredients

Cornmeal- Because what would cornbread be without the cornmeal? Be sure to use actually yellow corn meal, not Jiffy muffin mix or a cornbread mix. These are not the same!

Flour- helps keep the bread from crumbling and provides structure to this dish.

Sugar- provides a sweet flavor and helps retain moisture to make it super yummy!

Salt- you never notice the salt unless it’s gone! Salt in breads are absolutely essential- don’t skip it!

Baking Powder- I increased the baking powder in this dish to make up for the fact that there isn’t any egg. 🙂

Cornstarch- Added this as well since this dish doesn’t contain eggs.

Milk- provides a more tender crumb to this yummy cornbread!

Oil-helps keep this cornbread moist and prevents it from drying out!

Greek Yogurt- adds some protein to this dish since it doesn’t contain eggs.
